"A rich, salted caramel, seafaring cocktail."
50ml Isle of Harris Gin
15ml Pedro Ximenez
5ml Salted Caramel Syrup
3 Dashes Toasted Almond Bitters
Pour all the ingredients into a mixing glass.
Add cubed ice and stir for ten to 15 seconds.
Strain the ingredients into a chilled martini glass.
Garnish with a cherry.
Harris' take on the famous Martinez cocktail which was the precursor to the martini.
Salinity is at the backbone of this serve. It is inspired by the sea and all it has given to and taken from the island.
